Biwa Time of the Year – Delicious Vegan Recipes

Oh yes, it’s that time of the year again. Our Biwa tree has delicious fruit and I’m loving it.

To be honest, I never even heard of Biwa until we moved to Japan. And I never really tried until we moved to new house and there was a Biwa tree right there in our new garden.

I didn’t really know what to do with the fruits so I started to experiment with it and found out that if I pick it before it’s too ripe, it had nice sourish taste, which I love in my salads.

And so my Biwa recipes came to life

Mixed Green Salad with Biwa

Ingredients

1/4 of iceberg lettuce

6 cherry tomatoes, quartered

1/8 of red onion, sliced

1/2 cucumber, sliced

1/4 of bell pepper, cut

2 biwa, squeezed over a bowl so juice and flash separates

Bunch of cilantro

Dressing

The juice from the Biwa fruit

1 tsp of olive oil

1 tsp of white balsamic vinegar

1 drop of Jade Lemon Essential oil

Punch of Himalaya pink salt

Method

Mix all the ingredient for the dressing and let sit together so the flavors combine.

Meantime, prepare all you vegetables and fruit together in a bowl. Pour the dressing over it, taste it and then use some salt.

Sprinkle with chopped cilantro and enjoy your healthy and delicious meal!

Quinoa Biwa Herb Salad

Ingredients

1 cup cooked quinoa

Bunch of Baby leaf salad mix

Bunch of coriander

3 leafs of fresh sage

1 cucumber

2 radishes

Little bit of fresh curry leaf

Salt

Olive oil

Lemon Essential oil

Three slices of bell pepper

Method

Wash your quinoa really well to avoid it turning bitter. Boil with cup of water, salt and the curry leaf. It will give it nice smell and flavor. Let it cool down

In the meantime, chop the baby leaf and herbs and cut your cucumber and radishes into slices. Squeeze the Biwa in your fingers so it opens and remove the pits, squeezing the juice and flesh into the salad bowl. Toss it together with the rest of the ingredients. Mix spoon of olive oil with two drops of Lemon EO and pinch of salt and toss it together with the salad. Serve with some bell peppers

Just in time for Christmas

I’m Czech and we spend basically entire December baking Christmas cookies and chasing our family away from the boxes full of those cookies… then Christmas comes and we are chasing everybody with plates full of cookies, making them eat it😂😂😂. I know, crazy. But we love it.

One of my favorite cookies are Gingerbread cookies. My auntie is the best when it comes to those. Hers are delicious and also absolutely gorgeous because she sure knows how to decorate them I don’t decorate mine cause I am not that good. To be honest, mine look like a 3 year old got hold of the frosting. I kid you not. But they are delicious and people always ask for more and ask for recipe.

I have tweaked the recipe using my beloved Young Living Essential oils. No need storing the spices anymore. So simple. I use Thieves EO and Ginger EO from the Vitality line (it’s marked for internal use). These oils are absolutely fantastic for our bodies and they taste great too

So here is my Thieves Gingerbread Cookies Recipe

Ingredients

250 g of All Purpose Flour

125 g of brown sugar

65 g of honey

1 large egg or 2 small ones

1/2 teaspoon of baking Soda

4 drops of Thieves Vitality Essential Oil

2 drops of Ginger Vitality Essential oil

1 extra egg, whisked, for eggwash

Method

Mix everything together very well and let the dough rest for about 12 h ( can be in the fridge up to 1 week).

Dust your working space and roll it out, cut your shapes as desired. Preheat oven to about 250C and bake on high for about 5-6 min till brown. When you remove them from the oven, rub it with egg wash right away. It will get the cookies nice and glossy.

For The Love Of Salads

I love food, there is no doubt about it. I often wake up with something particular on my mind and I rush to the kitchen to make it.

That day I woke up wanting salad. But not just any salad. I knew I wanted cauliflower in it for the crunchiness and coriander avocado combo for the flavor. Hmmmm, what dressing? My eyes fell on some grapefruits and I knew what I’m gonna make!

So I grabbed all the ingredients (half an iceberg lettuce, cucumber, mixed salad leaves, coriander, avocado, few tomatoes and 1/4 cauliflower and just chopped it all

Putting everything in a bowl and setting aside, I got on making the dressing

In a separate bowl I mashed together slice of red and white grapefruit and few cubes of pineapple with spoon of olive oil.

I mashed it really well to get as much juice out of it as possible, then added 1 drop of Young Living Black Pepper Essential oil and 2 drops of Young Living Lime Essential Oil.

I love adding Essential oils to my food. They taste great and give my food extra layer of flavors. I could have used Grapefruit Essential oil instead of the fruit but I wanted the juice as well, not just the flavor, so this time I opted using the fruit. Also, I bought precut fruit bowl and I wanted to use it up.

Adding Essential Oils to food has many benefits, it has amazing flavor but also benefits our digestion. I love the flavor of Black Pepper Essential oil. It’s my go to for most of my dressings.

After mixing it really well together, I added some salt and poured it over the salad, tossing all together.

And then I just sat in my garden and enjoyed the beautiful weather and delicious salad. Oh yum!

Hot Cross Buns with Essential oils

I love cooking and baking. Food in general is my big passion and ever since I started to use Essential oils, I also looked for ways to incorporate them in my food.

I have done lots of research to learn the Why and When and How, because cooking with Essential oils is a bit of science. You can’t just dump few drops here and there and hope for the best. You would ruin your dish.


First of all, I only cook with Young Living Essential oils. They have the best standards and as the only Essential oil company offer Seed to Seal Guarantee, which is very important. You cannot use oils that you have no idea where they came from or if they are diluted or tinted with God knows what. That’s dangerous. So please follow my suit and start using Young Living (pm me if you need to learn where to get your oils). Also remember, these oils are 100%, so highly concentrated, so little goes a long way.

The other day I woke up and felt like some hot buns. Hmmmm. I started to look for recipe for something delicious and came across one using dried spices. Not me! I reached for my Essential oils and voila, delicious buns came to life.

Hot Cross Buns with Essential oils
1 cup of milk

1 package yeast

3/4 c of brown sugar

1 tsp sugar

2 1/4 c of all purpose flour

2 c bread flour

1/2 cup of raisins or other dried fruits/candied fruits ( I used candied lemons with peel)

1 tsp salt

2 drops of Orange, Lemon, Cinnamon, Nutmeg and Clove EO

4 tbsp unsalted butter

2 large eggs

1 egg yolk

1/4 tsp of vanilla
For the topping

1 tbsp of milk

1 tsp of powder sugar

1 drop of Lemon EO
Method:

Combine Luke warm milk, 1 tsp of sugar and yeast in a cup and wait till it gets foamy.

Combine both the flours, sugar, candies peels and dried fruits, salt in a bowl. Add butter. Whisk your eggs separately and add the EO into the egg mixture and combine, then add to the flour mixture. Keep mixing with bread hook on low until it combines and sticky dough form. Transfer to floured surface and knead until smooth. Form a ball and place it into a bowl that has been coated with oil. Let us rest for about an hour in a warm place.

After the dough has doubled, line a baking pan with parchment paper. Transfer the dough to a floured surface and knead some more, about 3 min. Divide into 12 pieces and form each piece into a ball. Set with spaces in between as they will double. Cover and let rise about 60-80 min.

Preheat your oven to 200 C. (400 F)

Before baking, combine the yolk with spin of water and and brush this mixture on top of each bun. Bake until golden, approx 20 min.

Transfer to wire rack to cool down. Combine confectionary sugar with spoon of milk and drop of Lemon EO and sprinkle over the buns and make a cross.
I hope you enjoy it. We are small family so I baked from half portions and had 6 big buns. I had one bun left the next day so I made French toast from it for Little D for breakfast. It was great!
